The cows’ diet of crystal-clear water from Alpine glaciers, along with mountain flowers, herbs, and other plants, creates a unique profile. The specific herbs and plants the cows graze on give the milk its distinctive taste, which is then reflected in the quality of raclette cheese. This cheese is made across Switzerland and in parts of France, with each producer boasting the uniqueness and originality of their cheese. The main regions where raclette is produced are Valais, Central Switzerland, Eastern Switzerland, and the French region of Savoy.
